Lottie's Blackberry Bavarois

We were featured on Channel 4's 'The Great New Year's Bake Off', Lottie Bedlow (Lottiegotcake) created this delicious recipe for Blackberry Bavarois using our Wild Berry Moonshine. Lottie has been kind enough to share her recipe she used on the show with us! We hope you all enjoy this as much as Paul Hollywood did!

For the Blackberry Bavarois:
● 250g blackberries
● juice of 1 lemon
● 2 tbsp Wild Berry Moonshine
● 1 tbsp jam sugar
● 2 free range egg yolks
● 75g caster sugar
● 200ml double cream
● 3 x bronze leaf gelatine sheets

To make the bavarois, blitz the blackberries and sieve into a saucepan. Discard the seeds. Add the lemon juice, sugar and Moonshine and reduce by half over a medium heat. Set aside. Bloom the gelatine. Heat 75ml cream and add the gelatine. Whisk the yolk and sugar, pour the cream over and whisk. Add the blackberry mixture and return to the heat, stirring occasionally until thickened. Transfer to a bowl and allow to cool before whipping the cream and folding together. Transfer to a piping bag and pipe into a mould of your choice and refrigerate for an hour before serving.
