As we are saying goodbye to Cookie this weekend, here is a great recipe to get the most out of Cookie before it goes.
Our "Cookie" Moonshine tastes like homemade biscuits with a fine note of chocolate and is an extraordinary taste experience that you wouldn't want to miss. But Cookie is not just great as a drink on its own- if you want a few real biscuits to eat in addition to a glass of "Cookie", we have just the thing for you: our moonshine cookies.
You will need:
150g powdered sugar
1 teaspoon of vanilla extract
1 egg
220g of flour
½ teaspoon baking powder
2 tbsp of milk
2 tbsp "Cookie" Moonshine
80g chopped up white chocolate
100g chocolate chips (dark)
1 pinch ground cinnamon
Preparation:
- Preheat the oven to 180°C top and bottom heat. Line a baking sheet with parchment paper. In a bowl, mix butter, powdered sugar and vanilla extract. Then add the egg and beat the mixture until it's a creamy consistency.
- Mix the flour and baking powder, then gradually stir into the batter. Then add the milk, the moonshine and then the chopped white chocolate.
- Finally stir in the chocolate chips and cinnamon
- Use a spoon to place small heaps of the dough on parchment paper, spaced far apart, and then flatten slightly. Bake the cookies in the oven for about 10-15 minutes or until lightly browned. Allow to cool slightly before serving/wrapping.
