Moonshine and Cookies?

As we are saying goodbye to Cookie this weekend, here is a great recipe to get the most out of Cookie before it goes.

Our "Cookie" Moonshine tastes like homemade biscuits with a fine note of chocolate and is an extraordinary taste experience that you wouldn't want to miss. But Cookie is not just great as a drink on its own- if you want a few real biscuits to eat in addition to a glass of "Cookie", we have just the thing for you: our moonshine cookies.

You will need:

150g powdered sugar

1 teaspoon of vanilla extract

1 egg

220g of flour

½ teaspoon baking powder

2 tbsp of milk

2 tbsp "Cookie" Moonshine

80g chopped up white chocolate

100g chocolate chips (dark)

1 pinch ground cinnamon

 

Preparation:

  1. Preheat the oven to 180°C top and bottom heat. Line a baking sheet with parchment paper. In a bowl, mix butter, powdered sugar and vanilla extract. Then add the egg and beat the mixture until it's a creamy consistency. 
  1. Mix the flour and baking powder, then gradually stir into the batter. Then add the milk, the moonshine and then the chopped white chocolate.
  1. Finally stir in the chocolate chips and cinnamon 
  1. Use a spoon to place small heaps of the dough on parchment paper, spaced far apart, and then flatten slightly. Bake the cookies in the oven for about 10-15 minutes or until lightly browned. Allow to cool slightly before serving/wrapping.

And that's it. The moonshine cookies are the perfect snack with a glass of cookie, and they taste even better paired with the ‘Milk and Cookie’ cocktail. Enjoy!
